Here is the recipe for Cyril Lignac’s crispy shrimp salad, spicy cream (All in the kitchen):
Preparation time: 12 minutes
Ingredients for 4 persons
- 16 raw shrimp, peeled and pitted
- 150g of panko breadcrumbs or muslin flakes or bread crumbs
- 100g rice flour
- 2 eggs
- 1 Roman
- 2 peeled avocados
- a few chopped coriander leaves
- 2 new onions, washed and minced
- 12cl sesame oil
- 5cl white balsamic vinegar
- 2 tsp. mayonnaise
- 50g Greek yogurt
- 1 tsp. chopped ginger
- 1 clove garlic, minced
- Sesame seeds
- Sunflower oil
Bread the shrimp in the rice flour then in the beaten eggs and finally in the breadcrumbs of your choice. Place them on a plate. Cut the romaine into ½ cm thick strips, put it in a bowl, add the coriander and onions. Dice the avocados.
Mix the Greek yogurt in a salad bowl with the mayonnaise, garlic, ginger and flavor with Tabasco. Book aside. In a second bowl, pour the sesame oil and balsamic vinegar.
In the pan of hot oil, fry the shrimp until golden brown and then drain them on a plate with paper towels. Add the avocados to the salad, season the salad with the dressing, place in a dish. Cut the shrimp in half and put them in a bowl with one or two spoonfuls of yogurt-mayo sauce, place the shrimps on the salad and sprinkle with sesame seeds.
