A fruity salad made from crunchy radicchio and sweet blueberries with a topping of crispy, tangy tempeh strips. Salad can taste this exciting! Whether as a light lunch or a fruity starter – this salad is always a highlight on the plate!

Personalize the amount

For the salad

  • 200 g Tempeh
  • 1 Romanasalat
  • 1 HE Coconut oil
  • 1 HE soy sauce
  • 300 g Radicchio
  • 150 g Blueberries

For the dressing

  • 150 g Blueberries
  • 50 ml dark balsamic vinegar
  • 2 HE olive oil
  • 2 HE Lemon juice
  • 0.5 TL salt
  • 0.5 TL black pepper
  • 0.5 TL cinnamon

Preparation:

  1. For the salad, cut the radicchio and romaine in half and remove the stalk. Cut the leaves into very fine strips and place them in a bowl with the blueberries.
  2. For the dressing, put the olive oil, vinegar, lemon juice, salt, pepper and cinnamon together with the blueberries in a tall blender jar. Puree everything into a fine dressing.
  3. Now heat coconut oil in a pan. Cut the tempeh lengthways into slices and fry until crispy. Then deglaze with soy sauce.
  4. Arrange the salad with the dressing and the hot tempeh strips and serve directly.
