A new week of Tous en cuisine, live with Cyril Lignac will begin on M6 Monday, August 31, 2020. Discover the list of ingredients and utensils needed to best reproduce the chef’s recipes.

Monday August 31 marks the end of the summer holidays and the start of the school year for many schoolchildren and students. But it is also the beginning ofa new week in the kitchen for Cyril Lignac. The chef is back on M6 in All in the kitchen since August 24. If Cyril Lignac has made his comeback with a Niçoise salad that created controversy, the Aveyronnais has chosen for the week of August 31 to September 4, recipes of great classics such as lemon pie, but also more original with a black sesame cream or a grilled chicken with spices, corn, coconut and lemon. Despite the end of the summer holidays, the chef has also chosen to offer light dishes such as figs salad, burrata and sesame or a fine peach pie. Monday August 31:

DISH: CRISPY MACARONI GRATIN

The ingredients for 4 people :

  • 250g cooked macaroni
  • 20g butter
  • 20g flour
  • 1 tbsp. mustard
  • ½ liter of whole milk
  • 100g of grated cheese such as Emmental / Gruyère or Comté
  • 100g of grated parmesan cheese
  • 150g pancetta or bacon or bacon, cut into small pieces
  • 50g white bread cut into small cubes of ½ cm

Utensils :

  • 1 sauté pan + 1 spatula or whisk + 1 spoon
  • 1 baking dish
  • 1 pan + 1 plate covered with 1 sheet of absorbent paper

DESSERT: LEMON PIE

The ingredients for 4 people :

For the tart shell:

  • 190g white chocolate
  • 290g of lace pancakes
  • 20g butter
  • 1 lemon + 1 plain cooked meringue (optional)

For the lemon cream:

  • 2 eggs (150g of eggs)
  • 150g of sugar
  • 1 lemon zest
  • 120g lemon juice
  • 1 gelatin sheet (immersed in a cold water bath 20 minutes before the start of the recipe)
  • 225g cold butter, cut into small cubes

Utensils :

  • 1 salad bowl + 1 tablespoon + 1 pie ring or 1 aluminum or porcelain pie dish + 1 angled spatula + 1 serving dish
  • 1 saucepan or sauté pan + 1 whisk
  • 1 hand blender + 1 spatula + 1 piping bag (+ 1 plain tip) + 1 microplane

Tuesday September 1st:

DISH: BOLOGNAISE ROLLED PIZZA

The ingredients for 4 people :

  • 1 rectangle pizza dough roll if possible
  • 450g cooked bolognese meat
  • Espelette pepper
  • 3 balls of mozzarella or 180g of grated mozzarella
  • 1 egg
  • A few basil leaves
  • Some salad leaves
  • Olive oil
  • Fine salt and freshly ground pepper

For the vinaigrette:

  • 15cl of neutral oil
  • 40g of wine vinegar
  • 40g mustard
  • 50g hot water

Utensils :

  • 1 saucepan + 1 spatula
  • 1 rolling pin + 1 slicing knife + 1 mold 22 to 24 cm + 1 brush + 1 small ramekin
  • 1 salad bowl + 1 whisk + 2 tablespoons

DESSERT: BLACK SESAME CREAM

The ingredients for 4 people :

  • 50 cl of whole milk or almond milk
  • 4 tbsp. black sesame puree
  • 25g brown sugar
  • 25g of cornstarch
  • 2,5cl of water
  • 1,5cl of orange blossom water
  • 2 tbsp. shelled and crushed pistachios
  • 4 tbsp. maple syrup

Utensils :

  • 1 heavy-bottomed saucepan + 1 small hand whisk + 1 tsp. soup
  • 1 bowl + 1 spatula
  • 4 small cups / or small bowls

Wednesday September 2:

STARTER: FIGS IN SALAD, BURRATA AND SESAME

The ingredients for 4 people :

  • 12 washed figs
  • 12 washed grapes, cut into quarters
  • 200g stracciatella (heart of burrata)
  • ou burrata ou mozzarella
  • A few mint leaves
  • Fleur de sel and freshly ground pepper

For the sesame vinaigrette:

  • 1 tbsp. white balsamic vinegar
  • 3 tbsp. toasted sesame oil

Utensils :

  • 1 sauté pan + 1 spatula or whisk + 1 spoon
  • 1 baking dish

DISH: GRILLED CHICKEN WITH SPICES, COCONUT CORN LEMON

The ingredients for 4 people :

For the grilled chicken:

  • 4 chicken breasts cut into aiguillettes
  • 2 tbsp. tablespoon soy sauce
  • 2 tbsp. tablespoon olive oil
  • 1 tbsp. tablespoon of honey
  • 1 garlic clove, minced
  • ½ tsp. 1/2 teaspoon dried thyme
  • ½ tsp. 1/2 teaspoon ground cinnamon
  • ½ tsp. powdered nutmeg

For the corn:

  • 180 to 200g of cooked corn
  • 1 spring onion, chopped
  • ½ tsp. grated ginger and garlic
  • 100g of homemade mayonnaise
  • 1 pinch of ground cumin
  • 1 pinch of smoked paprika
  • 1 pinch of cinnamon
  • 1 lime
  • 100g grated and toasted coconut
  • Fine salt and freshly ground pepper

Utensils :

  • 2 dishes + 1 pan + 1 tongs
  • 1 salad bowl + 1 whisk + 1 microplane

Thursday September 3:

DISH: PIÉMONTAISE SALAD

The ingredients for 4 people

  • 4 potatoes, cut into 1 to 2 cm cubes
  • 4 eggs
  • 3 tbsp. homemade mayonnaise
  • 2 tbsp. ketchup
  • 2 slices of ham cut to ½ cm thick then into cubes
  • 2 tomatoes, seeded and cut into small cubes
  • 2 spring onions, chopped
  • 6 pickles, cut into small cubes
  • 3 tbsp. chopped parsley
  • 1 romaine washed and stripped
  • Fine salt and freshly ground pepper

Utensils :

  • 1 salad bowl + 1 whisk + 1 spatula
  • 1 saucepan + 1 spider + 2 salad bowls + 1 fork
  • 1 board + 1 slicing knife

DESSERT: FINE PEACH PIE

The ingredients for 4 people

  • 4 yellow peaches, cut into thin strips
  • 3 pastry sheets
  • 50g + 25g of melted butter
  • 50g of tapioca
  • 2 tbsp. tablespoons of slightly melted honey
  • 50g toasted and crushed pistachios

Utensils :

  • 1 circle or pie plate + 1 brush

Friday September 4:

DISH: SUSHIS AND CALIFORNIA ROLLS

The ingredients for 4 people

  • 400g round japonica-type sushi rice
  • 1 small bottle of sushi rice vinegar
  • 60g cane sugar
  • fine salt
  • 1 bunch of chopped chives
  • ½ avocado
  • ½ cucumber
  • 2 sheets of nori seaweed
  • 600g Red Label Scottish salmon in boneless, skinless heart
  • wasabi (optional)
  • pickled ginger to enjoy the sushi (optional)
  • 100ml soy sauce

Utensils :

  • 1 bamboo mat + cling film
  • 1 board + 1 knife with a sharp and long blade
  • 1 small bowl of cold water + 1 gratin dish or flat glass + 1 spatula or a spatula
