Cyril Lignac shares his recipe for the last summer salad, a highly colorful dish
Here is the recipe for Cyril Lignac’s last summer salad (All in the kitchen, M6):
Preparation time: 15 minutes
Cooking time: 6 minutes
Ingredients for 4 persons
- 250g cooked bulgur or cooked freekeh or cooked quinoa
- 4 washed tomatoes
- ½ cucumber cut into thin slices
- 4 small spring onions
- 1 green pepper, cut into thin slices
- 200g of feta
- 25g black olives
- Some capers
- A few oregano leaves
- 9cl of olive oil
- 3cl of lemon juice
- Fleur de sel and freshly ground pepper
For the sauce, mix the lemon juice and olive oil together. Cut the tomatoes into quarters. Reserve them.
Place the cooked bulgur in a dish, add the tomatoes, the cucumber slices, the onions and the pepper. Add the black olives, feta cubes and capers. Season with the lemon / olive oil sauce. Sprinkle with oregano leaves.
Serve immediately.
