Here is the recipe for peach salad with herbs by Cyril Lignac (All in the kitchen, M6):
Preparation time: 5 minutes
Rest time: 20 minutes
Ingredients for 4 persons
- 4 white peaches, washed and peeled if possible
- juice and zest of 1⁄2 a lime
- 20g brown sugar
- the leaves of 1 branch of tarragon
- the leaves of 1 sprig of mint
- the leaves of 1 branch of basil
Cut the peaches into strips.
In a large mortar, pour the lemon juice, brown sugar and the leaves of fresh herbs.
Crush everything with a pestle. If you don’t have mortar, place everything in a bowl and crush with a rolling pin.
Divide the slices of peaches on a large plate.
Sprinkle over the herb mixture. Leave to marinate for 20 to 30 minutes in the fridge. You can leave it longer.
When ready to serve, use a microplane to grate a few lime zest on the peach salad.
