Wrongly confused with its cousin the chives, or even with the stems of the new onion, the scallion is renowned for its savory taste, which lends itself equally well to summer salads as to good hot dishes. Let’s take stock of this atypical plant.
What is a cebette?

The cebette, also called ” scallion onion », Is a herbaceous plant from the Midi similar to spring onions and used for its aromatic stems. Considered by many to be large chives, it is nevertheless characterized by a much more marked taste and fragrance than the latter.
On the stalls, the cebette is regularly confused with thenew onion, even though it is a very different variant. Indeed, this plant is distinguished by its underdeveloped bulb, which has taken an elongated shape to the point of being confused with its stem. Conversely, the new onion takes on the appearance of a small ball as it grows.

When is the springtime season and where to buy them?
Consumable in spring, summer and fall (from May to October), this aromatic plant is unfortunately not easy to find on the market. So where can you buy scallions? Most of the time, you will have to go to the market or to the market gardeners to be able to get it, because the big surfaces rarely make the difference between it and the new onion.

How to cook onions?
Traditionally, it is mainly the stems of the scallion that are used in cooking, because of their quality of aromatic herbs, just like chives or shallots. Perfect for a fried vegetables, scallions can also enhance the taste of Asian dishes or an omelet. In other cases, its bulb can also be cooked, as is the case in the Nicoise salad, where it is eaten raw and sliced into thin strips.
In some regions, scallions are also cooked as a side dish, being prepared and pan-fried the same way as the latter.
Can we cook green onions?
As you will have understood, the green of onions can of course be cooked, just like the bulbs. Nevertheless, it may be wise to cut off the top of the stems before going into the kitchen, because they are often hard and dry, like those of leeks or chives.
Can we freeze onion?
If fresh onions can be kept in the refrigerator for a few days, provided they are wrapped in a damp cloth or in absorbent paper, they can also be frozen. Chopped or sliced, the onion can be kept for many months in the freezer, for example by placing it in a suitable airtight box or in a freezer bag.
The wonderful omelette with scallions
In order to experience the great taste of this aromatic plant, you can prepare the‘incomparable omelette with spring onions, especially since this recipe requires only 15 minutes of preparation. For 6 people, you will need:
- 12 eggs,
- 1/2 glass of water,
- 2 bunches of spring onions,
- olive oil,
- salt and pepper.
Start by washing the scallions in clean water, then remove their first skin. Cut the top of the green stems to remove the too dry part, and chop the rest into thin slices. In a frying pan heated with olive oil, brown your scallion rings for a few minutes, the time to let them color, then add a knob of butter. When it’s done, pour half a glass of water into the pan, and cover the whole with a lid so that the onions become tender. At the same time, whisk the eggs in a bowl, and season them to your liking. Return to your pan, and incorporate the preparation, stirring vigorously. Cook over medium heat until you get the desired texture for your omelet. It’s ready !
