Located on the top of a cliff within the new One & Only Mandarina resort, which opens its doors on November 1 in the Riviera Nayarit, Carao is the new restaurant created by renowned Mexican chef Enrique Olvera. Open exclusively for dinner, this space will allow you to enjoy spectacular views of this Mexican destination at sunset. With indoor and outdoor dining spaces, an open kitchen, lounge, and bar, Carao promises to become a new favorite destination for haute cuisine lovers.

“The vision behind Carao is to emulate a traditional Mexican palapa from the Pacific coast, in which every detail has been woven into the simple idea of ​​well-being. This notion is the backbone of the restaurant, with a menu that flows naturally: it’s all about the luxury of being there, ”says Olvera. Carao will not only be a celebration of food, but of the Mandarina scene, the community and its vibrant culture through music and art, which will generate a connection between all these elements and our visitors ”.

Olvera’s hallmark – the fusion of a modern vision with revered techniques from antiquity – will result in a menu rich in local ingredients. Some of the dishes that will include the menu are mackerel ceviche with soy germ and cucumber, a seafood medley and a coconut tamale with turnip, green mole and purslane. Of course, they could not miss a shaken aged fish, grilled squid, or octopus served with celeriac, coconut and garlic. To accompany it, there will be a careful selection of mezcals, tequilas and Mexican craft beers.

For its part, the bar’s menu will feature creations such as celery toast with spicy tartar, eggplant tetela with pea sauce, roasted leek tacos with almond mole and seaweed pork rinds with pico de gallo.
