We combine different flavors for this salad: fruity apples with creamy feta, aromatic cocktail tomatoes and beluga lentils. And a pleasure both immediately and the next day, because this salad is great to prepare and take with you to work.

Personalize the amount

  • 250 g Belugalinsen
  • 200 g Feta
  • 200 g Cocktailtomaten
  • 0.5 Bund parsley
  • 2 HE olive oil
  • 2 HE vinegar
  • 1 TL salt
  • 0.5 TL Pfeffer
  • 2 Apples
  • 500 ml Vegetable broth


  1. Cook the beluga lentils according to the package instructions. Don’t use water here, but vegetable broth.
  2. Halve the cocktail tomatoes. Quarter, core and thinly slice the apples. Finely chop the parsley.
  3. Mix a dressing from olive oil, vinegar, salt and pepper.
  4. Put the cooked beluga lentils in a bowl and mix with the dressing. Mix in the tomatoes, apple slices and parsley. Crumble the feta over it and serve the salad lukewarm.


If you want to take the salad to work for the next day, it’s best to add the dressing right away, so the sliced ​​apples won’t turn brown and it can go through nicely.
