Its AOC obtained in 1971 requires that the Chasselas grape from Moissac be rich in sugar, picked manually and in several batches as it matures, then freed with small scissors of all damaged grains. A raisin handmade, almost haute couture!

You can therefore be confident in the AOC and be satisfied with choose clusters evenly covered with bloom, this fine natural white veil which, when intact, proves that they have not been too manipulated. A not too dry stalk indicates a recent harvest, which is good because it is better very fresh.

How to prepare the Chasselas de Moissac?

Above all, do not try to make the bloom go away, it is not a treatment residue! Rinse it briefly under lukewarm water and wipe it dry. Its skin is so thin that there is no need to peel it.

As for its seeds, which are very small, you can keep them. They provide a crunchy note and are rich in good fatty acids.

How to cook Chasselas grapes?

To tell the truth, it is so delicate that the ideal is above all to grab it naturally. It is a sensual and subtle grape, which bursts in the mouth by releasing a very sweet and mild juice.

Sophisticated recipes and cooking do not pay homage to it and alter its fragile charm. Yes to clafoutis, with small gratinated sabayon, with grains that we throw at the last minute in the casserole of roasted quails, but that’s it!

On the other hand, you can bite into it with a slightly dry goat dung or a slice of Parma ham.

Are Chasselas grapes too sweet?

Too sweet the grape? Much less than a cake all the same! With 70 kcal per 100 g (that is to say a small bunch), it is certainly less rich than an ordinary fruit yogurt (120 kcal per 130 g jar). And unlike some dessert creams, it does not contain no additives !

The trick to cooking Chasselas grapes without spoiling them

As seen above, it is not always wise to cook the Chasselas grape from Moissac. However, we can turn into a great condiment for Oysters. It is then necessary to choose rather small grains, to peel them and macerate briefly in a spoonful of cider vinegar. A treat with fairly sweet marennes-oléron. You can also place a few grains on a warm skate wing in vinaigrette.
