The ingredients of the recipe

For the little buns:

  • 150g of milk
  • 2 doses of squid ink
  • 2 tbsp. 1 teaspoon baker’s yeast
  • 250g of flour
  • 1 tsp. tablespoon of sugar
  • 1 tsp. teaspoon salt
  • 1 egg yolk + the white
  • 50g softened butter
  • 1 tsp. sesame seeds

For garnish:

  • 2 red onions
  • 2 handfuls of lamb’s lettuce
  • 16 cucumber slices
  • 2 boxes of Tuna in Escabèche Saupiquet
  • 1 tsp. tablespoon olive oil

For the sauce:

  • 1 tsp. mustard
  • 1 tsp. tablespoon of sour cream
  • 1 tsp. chopped basil
  • salt pepper

Preparation steps

1. In a bowl, pour the flour, sugar and salt.

2. Add the milk and knead until completely absorbed.

3. Add the egg yolk and the butter and knead until you obtain a very smooth dough.

4. On a floured work surface, divide the dough into 16 pieces. Form balls and place them on a baking sheet covered with parchment paper.

5. Brush with egg white diluted with a little water, sprinkle with sesame seeds and flatten slightly.

6. Cover with a cloth and let stand for 1 hour 30 minutes at room temperature.

7. Preheat the oven to 190 ° C. Bake for 10 minutes.

8. Prepare the sauce by mixing the mustard with the sour cream, basil, salt and pepper.

9. In an oiled pan, grill the chopped red onions.

Tip for assembling mini-burgers: cut the buns in half. The steps of the recipe

The steps of the recipe

1. Preheat the oven to 200 ° C.

1. Cook the rice about 11 minutes in lightly salted water, cool, then drain.

2. Wash the radishes, cut them very finely using a mandolin, and store them in the refrigerator in a bowl of cold water with ice cubes.

3. Wash, peel the cucumber, cut it lengthwise, remove the core, and cut it into small sticks 2cm long.

4. Wash, peel the mango, cut it into large slices and then into cubes.
